Meet the New Butcher on the Block

He had me at bacon. Ryan Fibiger, sustainable butcher and owner of the Saugatuck neighborhood’s soon-to-open Craft Butchery, promises bacon for Slice of Saugatuck festival goers, along with a little lesson in meat. Saturday, Sept. 17 at 1:00 p.m., he will host a pig butchering demonstration on the plaza at the new Saugatuck Center at the heart of the historic neighborhood. (The slightly faint of heart take note: This is not a live slaughter. Fibiger will merely demonstrate butchering techniques on an animal that has already been humanely killed.)

Fibiger’s focus from the start has been on creating an “old fashioned butcher shop with modern ideals.” Both will be on display Saturday, as he demonstrates his craft in front of his new community. If curiosity isn’t enough to draw you, Fibiger is also promising bacon, which is really all the incentive I need.
