What Makes It Pasta Perfect: Chef/Owner Aldo Borrera, a Culinary Institute of America (CIA) grad, cooks with influences from his hometown of Pannarano, Italy and likes to think he brings a taste of his country to Wayne. His Southern Italian-inspired menu often features seasonal dishes as well as daily seafood specials, and lighter lunch specials to keep up with the changing times.
Worth Special Mention: Borrera is a hands-on owner and is in the restaurant all the time. "It's a labor of love," he said of his 20-year-old eatery, a testament itself to its success. Another bonus: the restaurant is BYOB.
