Her gluten-free gourmet fresh cut fries are cut and brined on-site. Diners can choose classic fries or add a gourmet seasoning and dipping sauce.
The Warwick "wannabe chef" said she was trying to think of something different and more creative than what she normally saw in a food truck when she came up with the concept two years ago. She also wanted to do something she personally liked.
"This was one way to turn a hobby into a small business," she said.
Among her most popular sellers: the roasted garlic and parmesan fries with housemade aioli, and the lemon pepper and rosemary, also with an aioli.
"I've tried to come up with things I think go well together,' she said.
New this season is poutine, a traditional Canadian dish with cheese curds and fries seasoned with salt and pepper and hot gravy on top
There are seven different kinds of fires but she's always open to suggestions. You can find her at Pennings Orchard in Warwick for four consecutive weeks starting the weekend of Sept. 23. She'll also be at the Warwick Applefest on Sunday, Oct. 1.
