So Casino decided to make his barbecue joints a triple threat. And being the shrewd businessman he is, he knew three little words that had the potential to bring chills to his customers, and put smiles on their faces: barbecue, bourbon and brew.

Holy Smoke in Mahopac and Croton on Hudson both specialize in offering the ultimate experience for lovers of dry-rubbed, slow-smoked barbecue, top-shelf bourbons, and some of the best craft brews available.

"People argue about what our No. 1 most popular item is," Casino told Daily Voice during a recent visit to his Mahopac location. "It's either our pulled pork or our ribs... dry rubbed and smoked for hours."

Brisket and chicken are other top sellers, and they also make their own chorizo (sausage), which is very popular with customers.

"Our food is for people who want something different," Casino explained. "Our smoked chicken, when it's in the pit, slow cooking... it adds another dimension to the flavor. It's moist and full of flavor."

Some of the reviews from customers included "Amazing barbecue," "best barbecue in the area," and "superb."

Holy Smoke is also known as one of the top craft beer bars in the country, according to Casino. "It's all about the beers we carry," he said. "Including some very rare beers."

The restaurant's menu include a full page of high and and rare bourbon choices, which pair beautifully with food on the menu. "Bourbon has a special character to it, and if you do American cuisine with craft beers, you want to do bourbon," Casino said.

Wings, of course, are also big. Casino said he goes through 2,000 pounds of wings every Super Bowl Sunday. Among Casino's wings secrets? - his are marinated, smoked, then fried "to crisp them up just a little."
