Hudson Valley's First Sake Brewery Opening

In a first for the Hudson Valley, the Culinary Institute of America has formed a partnership with Asahi-shuzo, the brewer of Dassai sake, to open a sake brewing factory in Hyde Park.

Gov. Andrew Cuomo made the announced of the newly forged partnership during a visit to Marist College Thursday afternoon.

For those not in the know, sake is an alcoholic drink produced from fermenting bran that can be consumed either hot or cold. 

Asahi-shuzo, known around the world for its fine sake, is most famous for its Dassai line, which is named in part for revolutionary haiku poet, Masaoka Shiki, who called himself Dassai, according to the company's website. 

“Following many months of work with the Culinary Institute of America, we are excited Asahi Shuzo has selected Dutchess County for the location of its U.S.-based sake brewery," said Dutchess County Executive Marc Molinaro. "From fine foods to craft beer, wines, and distilled spirits, Dutchess County has become a food and beverage destination."

The CIA currently has a collaboration with the Brooklyn Brewery which supplies the school's restaurants. Students can also take courses to learn the brewing process.

"Now, CIA students and visitors alike will have first-hand access to a working sake brewery. The economic impact through this project, with the addition of new jobs and increased tourism, will not only benefit Hyde Park but the region," Molinaro added.
