Spring is in the air, and in Georgetown, so is the scent of barbecued meat. That means its grilling season at Minny Vinnys, Gino Marsilis deli at the base of the Route 57 hill. Marsili is now barbecuing in his parking lot smoker four days a week Monday, Wednesday, Friday and Saturday. But once the weather is consistently warm that schedule should expand.
He also has plans to put in a patio out front and expand to evening hours and outdoor dining. We want to make it a place where you can sit outside and have ribs and a beer, he says.
Marsili, who has been serving food at Minny Vinnys for eight years, got into barbecuing last summer when he roasted a pig in his oven for a party. A friend told me it would be even better in a smoker, so before you knew it Id had him build me one. When things are in full swing, he plans to offer beef brisket and tenderloin, chicken, ribs and pulled pork.
The expanded menu and outdoor dining area arent only the expansions he has planned for this year: Beginning next month, hell be open Sundays from 8 a.m. to 2 p.m. Theres really no place in the area to get breakfast, he says.
Marsili, whose days now start with predawn preparations and run through mid-afternoon cleanup, knows the expanded hours and operation will mean more work. This is going to be a hard year, no question, he says. But if youre passing through Georgetown and get a whiff of smoky brisket, it might just be the smell of culinary success, too.
