How Long in Business: Five years.

Most Popular Slice Sold: Margherita pies. Popeye's White with ricotta, parmigiana, mozzarella, and fresh spinach also ranks high.
Key to Success: The pizzeria, with a large wood-fire oven from Italy, offers a variety of crusts and takes it dough very seriously. The menu, in fact, explains the difference between them.
