Louis’ Lunch, located at 263 Crown Street in New Haven, is widely regarded as the birthplace of the modern hamburger. According to legend, proprietor Louis Lassen was asked by a customer in 1900 to make “something he could eat on the run.” In response, the man was given a blend of ground steak trimmings between two slices of toast — a hybrid of a sandwich and a burger.
