Late summer means tomatoes, tomatoes, tomatoes! Ripe, juicy and begging to be eaten, this fresh summer fruit is about to disappear. So make the most of it we must. Whether you grow them yourself, or find them at Fairfield County farmers' markets, this recipe is a simple -- and simply delicious -- way to enjoy a lingering taste of summer.
Pasta with Fresh Tomato Sauce
1½ pounds ripe tomatoes, cored and chopped
¼ cup extra-virgin olive oil
4 cloves garlic, diced
2 tablespoons red wine vinegar
¼ - ½ cup sliced or torn fresh basil leaves
Salt and pepper to taste
Freshly grated parmesan cheese (the more the better)
Mix ingredients (except the cheese) in a bowl, cover and let stand for several hours. Simmer sauce over medium heat and serve with pasta of your choice. Top with grated parmesan and additional basil.
