Wave Hill Breads Bakes in the New

Margaret Sapir and her husband, Mitch Rapaport, have been partners in bread baking since 2005, when they launched Wave Hill Breads, originally out of Wilton. Over the years their carefully crafted loaves have come in one variety, the Pain de Campagne loaf, and have become a coveted commodity at local farmers markets, grocers, restaurants, and kitchen tables across the county.

Now, they’re rising to the occasion of their own success. Joining their beloved Pain de Campagne loaf are two new recipes: Roasted Red Pepper and Olive Oil Ciabatta and Whole and Hearty Multigrain.

If this news isn’t enough to make your mouth water, I have more leavened love to share. Wave Hill Breads is set to open a new storefront at 30 High St. in Norwalk. There you’ll find the loaves you’ve come to know and love side by crusty side with new loaves you’ve yet to try.

Mitch and Margaret have big plans for the new space, too. They’re working on creating a full-service café, complete with all the starchy trimmings, at their new address. And their projected opening in May is right on the horizon.

Now that's what I call breaking bread.
