The Butcher's Back

The “Eat Local” movement is about to get a little bit edgier. Saugatuck Craft Butchery is set to open in Westport next month, cutting its way into the Saugatuck revival and the broader Westport culinary renaissance that’s currently underway.

The mission? To bring back the local butcher.

Headed up by Ryan Fibiger, Saugatuck Craft Butchery promises to be one of the few butchers in the country that espouses a “nose-to-tail” philosophy, a commitment to use every part of the animal. Committed to sustainability, Saugatuck Craft Butchery will feature organic meat from pasture-raised animals.

Look for it to open at 575 B Riverside Ave. in Westport sometime next month.
