According to the Farmers' Almanac, the first frost date in Fairfield and Westchester Counties is approximately Oct. 15. That's great news for those of you with empty holes in your vegetable beds because it means you can plant another crop.
Many popular vegetables mature in 75 days or less, so break out your seed packets and get planting. Just make sure you do it by the first week of August or your seeds won't have time to mature. You'll also need to be diligent with watering, especially on hot days.
Carrots are ready in about 75 days. Try The Cook's Garden's kaleidescope mix of orange, yellow and purple varieties.
Bush and pole beans take 60 days. Plant some of each.
Beets are easy to grow and yield two crops: tasty greens and yummy roots. They'll be ready to harvest in 60 days or less.
Swiss chard is in the beet family and grows fast. Harvest the outside leaves and the plant will keep growing.
Radishes are the fastest growers of all. They take about a month. If you love radishes, plant a new section every week to eat all fall.
All pea varieties mature in about 65 days. Alternate sugar snaps and snow peas.
You can get a second crop of cucumbers if you hurry. Try round yellow cucumbers for a change.
Lettuce takes about 50 days to mature, so keep summer going with a mesclun mix of different lettuce varieties or plant bright green oak leaf.
