Mango Salsa Dances on Your Barbecue Menu

The final weekend of the summer season is just about here. Whatever you’re serving up this Labor Day, this recipe for mango salsa is sure to be a hit. It complements chicken or fish beautifully (think halibut or swordfish, seasoned with a little cayenne pepper and some lime juice). It’s also a great alternative for the standard chips and salsa appetizer.

Fresh Mango Salsa

2 ripe mangos, peeled and diced

1 jalepeno chili pepper, minced (leave the seeds in for a little more kick)

1 clove garlic, minced

3-4 tablespoons fresh cilantro, chopped

½ a medium red onion, finely chopped

1 tablespoon extra virgin olive oil

The juice of one lime

Mix ingredients together in bowl and season with salt and pepper to taste.

 

Feel free to experiement with this one by adding avocado, black beans, or even some ripe tomato.
