Local Chef: Katie Vitucci, aka The Parsley Thief

Norwalk’s Katie Vitucci is a professional caterer and prolific food blogger. Based in South Norwalk, this mother of two shares recipes regularly on her blog, The Parsley Thief.

I’m an avid fan of Vitucci’s blog and recipes, and have test driven more than a few in my own kitchen, with consistently satisfying results.

Now that summer’s long, lazy days are on the wane, I find myself coming back to a personal favorite from Vitucci’s recipe box: steak tacos.

 

Ingredients for The Parsley Thief’s Steak Tacos with Pickled Onions

 

pickled onions:

¾ cup distilled white vinegar

3 tablespoons sugar pinch of salt 1 bay leaf 5 whole cloves 1 large red onion, halved and thinly sliced

 

steak marinade:

½ cup packed fresh cilantro

3 cloves garlic, roughly chopped 3 scallions, roughly chopped 1 jalapeno chile, stemmed and roughly chopped½ teaspoon ground cumin 1 tablespoon freshly squeezed lime juice

¼ cup canola oil

tacos: 1-1½ pounds flank steak 1 teaspoon kosher salt½ teaspoon sugar½ teaspoon ground black pepper 1 tablespoon canola oil 12-6-inch corn tortillas
