Fritz Knipschildt Shows You How Sweet It Is

No one around these parts knows chocolate so well as the famed chocolatier, Fritz Knipschildt. His artisan cocoa creations are nationally known and loved, and his café, Chocopologie, is a South Norwalk institution of confectionary decadence.

Chef Knipschildt’s European pedigree informs his gastronomic perspective. He has worked in kitchens across the Continent since the tender age of thirteen. Early in his career, he found his true culinary calling. “We had access to the best raw chocolate and incredibly fresh ingredients,” says Chef Knipschildt. “This was heaven for a young, creative chef and I absorbed it all. With my background in the savory kitchen, I loved to experiment with sweet and savory flavors and I continued to do so with chocolate.”

Now you can learn some of Chef Knipschildt’s sweet secrets as he instructs two upcoming classes at the Clarke Culinary Center in Norwalk. Thursday, February 24, he’ll teach you how to pair the perfect wine with your dessert. Chef Knipschildt and his team from Chocopologie will create three tempting desserts and unlock the wine pairing secrets of each.

And Thursday, March 17, Chef Knipschildt will instruct on the art of creating chocolate tapas. I’ve decided to take this class myself and find out how to marry two of my favorite things. Look for my coverage of this irresistable class next month.
