The politics of fresh food and clean water are shaping up to be some of the most debated and discussed issues of the 21st century. Put simply, good food isnt available to everyone. Yet. Thats where Columbia professor of environmental health sciences Dickson Despommier comes in. His new book, The Vertical Farm: Feeding the World in the 21st Century makes the case for urban farming in skyscrapers. These hi-rise eco-systems, Despommier argues, would use less land and offer year-round production of safe, nutritious, local food.
