Eco Java Brews a Better Cuppa Joe

Few things are more fundamental to my well-being than a good cup of coffee. This is not hyperbole. So I couldn’t be more elated by the arrival of Eco Java. Dana Zimmerman, Eco-Java’s proprietor, is now officially serving my very favorite coffee in Fairfield County.

What’s her secret?

“Well, I spent a lot of time coming up with the Eco-Java blend,” says Dana. “People come in and ask for it by name now. ‘I’ll have a large Eco.’” The blend, even iced, is bold but not bitter, a coffee enthusiast’s dream cup. “Purifying the water is important, too,” she says, opening a cupboard to reveal a filtration system. “You have to take out the chlorine and minerals you don’t want, but keep the minerals you do. There are more filters in the basement. It’s like a science experiment down there. Oh, and I never double brew,” she says. “Never.”

Dana’s experiment seems to be working. On a recent trip to Eco-Java, I met Barbara Feeney, who travels to this Byram coffee house from her home in Cos Cob. “It’s that good.”

The Eco part of this java joint is important to Dana too. “I use fair trade coffees and teas, and serve as many organic items as I can.” Even her cups are compostable.

If you’re hungry, Dana offers delicious sandwiches and wraps from David’s Soundview Catering, along with sweet treats from Ce-Ci, Ce-La, the Manhattan Mecca for pastries.

“After 18 years of running other people’s businesses, I decided it was time to start my own.” Dana’s pedigree as a VP of sales and marketing in the food and beverage industry has served her well. “I do love getting to know the customers. I like to take the time to chat with them. It’s important.”
