Eco-Friendly Pizza Bakes on Wheels

Easton's Jeff Borofsky arrives early at the Westport and Weston farmers markets to peruse the vendors' offerings for his pizza toppings. He might pick up some bacon from Greyledge, some fresh goat cheese from Beltane Farm, some zucchini, swiss chard, or mushrooms from Eagle Wood Farms, and some herbs from Gilberties. Then he heads to his prep kitchen and brick oven to get the day's pies going. He doesn't have to travel further than a few yards. His brand-new Skinny Pines Brick Oven catering business goes wherever he goes thanks to a specially designed trailer that houses his wood-fired oven.

"I was looking around for a business that would be unique and mobile and I considered converting an Airstream camper into a mobile bakery but then I came upon these amazing trailers. I headed to Colorado for a workshop on them and I was hooked." Borofsky felt strongly about a business that would take environmental concerns into account and about sourcing locally for ingredients and he's been able to accomplish both while making pizza lovers, county-wide, very happy.

He makes his dough from scratch every week, letting it cold ferment and rise for two full days for optimum flavor, texture and baking. He uses only eco-friendly plates napkins and boxes that are either biodegradable or post-consumer recycled and his oven is fueled by sustainably harvested wood. And he takes his show on the road — pizza, calzones, frittatas, cookies and more — not just for Farmer's Markets and fairs but for private parties as well. "Make and Bake" celebrations, designed for 15 people, include a dough-stretching lesson followed by personal pie creation. For bigger events, there's "The Works," which includes pizza, salad, and dessert. Custom-designed parties are also available. "We did a party for 70 a few weeks ago," said Borofsky.
