Craft Butchery Carves Out an Opening

After much anticipation, and plenty of hard work, Craft Butchery’s owners Katherine and Ryan Fibiger have announced that their brand-new store will be open for business “late this week.” Just in time for the holidays.

The space is located in the newly developed area along the Saugatuck River in Westport, and has been making mouths water for weeks as finishing touches were added. “We can't wait for you to finally taste our delicious meats and see the most beautiful butcher shop around,” the Fibigers wrote in a recent email.

Touting Craft as “an old fashioned butchery with modern ideas,” the Fibigers have set out to create something unlike anything else around. And their “pasture to table” idea promises to pay off in ways both sustainable and delicious. According to the couple, “To experience our meat is to understand what meat is supposed to taste like.”

While doors are now set to open this week at Craft Butchery, the Fibigers also want to remind hungry fans about the official grand opening party, slated for Saturday, Nov. 19. The bovine-based bash will also include plenty of samples, music, wine, beer and “incredible meat prizes.”

Craft is also taking orders now for Thanksgiving turkeys. With the butchery’s commitment to quality, it’s likely they’ll get gobbled up in a hurry.
