Bill Taibe to Open New Digs

The rumors have been swirling for months. It’s been tough to avoid Sotto voce utterances such as, “Bill Taibe is opening another restaurant and Massimo Tulio is leaving Fat Cat Pie Co. to help.” Today, CTBites reports it’s all true. Taibe and Tulio are now a team, the likes of which taste buds throughout Fairfield County have not tasted before.

They’ve taken over waterfront space in the rejuvenated Saugatuck neighborhood, which boasts other culinary heavyweights such as Mario Batali’s Tarry Lodge and the newly opened Craft Butchery.

Of his new venture, Taibe told CTBites’ Stephanie Webster, "We want to source great products, and do as little as possible to those products…making them the stars of the show." He continues to say that the new restaurant will feature daily specials alongside the waterfront view. “Really whatever looks good that day," says Taibe. "Think fish." As of now, Taibe says the new spot will open in early 2012.
