Saugatuck Craft Butchery, the new neighborhood butcher shop in Westport, is offering a “hands-on” Butchery 101 class. The first subject of study is swine. Ryan Fibiger, head butcher and owner of the butcher shop, will school students in the art of cutting and preparing your own pork.

It’s not a gift for the faint of heart, or those who don’t like to get their hands dirty. But, as Fibiger puts it, it’s a great gift “for the carnivore who has everything.”

And for the devout foodie who likes to leave the butchering to the experts, Craft also offers cook books and gift certificates, so you don’t need to worry about how to keep the bacon fresh while stuffed into a holiday stocking.
