The new business, named Gibson’s as a nod to the restaurant – Gibson’s Colonial Inn – that first opened at the site in 1937, will serve American cuisine, including hamburgers and steaks, according to the Poughkeepsie Journal, which reported that it is set to open on Monday, Jan. 2.
The restaurant at 11 Vassar Road will employ about 25 people, including several who worked at the former Hobnobbin’ Pub, according to the Journal.
Robert Dooley, the owner of Gibson’s, told the Journal that he has restored the restaurant’s interior and has plans to restore the exterior.
When the business is fully operational, its hours will be 11 a.m. – 3 a.m. daily, according to the Journal.
