TFS Burger Works, West Haverstraw/The Filling Station, Palisades
What Makes It Patty Perfect: Its slogan for one: “We are the meat & potatoes of burgers & fries.” The sister eateries each have their own personalities – the Palisades one is plunked down in a wooded area that customers have compared to the Hamptons and West Haverstraw’s sits on a heavily commercialized strip. But both serve up all-natural and organic burgers made with a blend of brisket, hanger steak, and short rib.
TFS is known for its free-range Black Angus beef ground fresh daily and made with no hormones or antibiotics. The “bold, juicy, and flavored with attitude” patties are all cooked “medium,” unless otherwise specified. According to Owner Stauros Panos, the secret to their burgers’ crusty yumminess lies not only in what they’re made of but how they’re cooked. Hanger steak, though lean and with only 10 percent fat, gives them a “steaky” taste, he says.
The 6-ounce patties are seared on a flat top grill which caramelizes them and keeps all those lovely juices inside. They are simply seasoned with salt and pepper and never, ever, smashed down while being cooked.
Top sellers at the West Haverstraw location are the Texaco, which is made with pepper jack cheese, hot peppers, and barbecue sauce, and the Overhaul, topped with smoked bacon and blue cheese. At the Palisades location, where celebs such as actor Aidan Quinn have been known to turn up for a nosh, the dry-aged steak burger is popular. If beef isn’t your thing, TFS also serves veggie and turkey versions. To go bunless, ask for your burger “naked,” meaning it will come on a lettuce leaf.
