Decades ago, he would've been the one working it. But that was in the 1980s, just after he moved from Mexico to California to work in his family's restaurant business.
These days? He's just focused on running the West Main Street eatery with his wife and twin boys.
And although he's no longer the one in the DJ booth, it reminds him that life in La Casita should be a party.
"I want to make people feel like they can come and forget all of their struggles," Jimenez said. "Change your attitude and come and enjoy life."
Jimenez made sure to bring the California flair with him when he created the gluten-free menu at La Casita, complete with fajitas, tacos and tortillas.
Two months ago, the restaurant received its liquor license and now operates a full bar.
While the drinks have given business a boost, it's not the cocktails or corn chips that the owner says keep people coming back.
In fact, it could be the owner himself, and his "life's a party" mentality.
At least, in his restaurant.
"Coming in here should feel warm, whether you sit in the dining room, the patio, in front or at the bar," said Jimenez as he fixed a drink for a customer behind the bar.
"It should be friendly, cozy and fun."
