Carmel Chef Cooks Up Brisket Recipe For Passover

CARMEL, N.Y. -- Are you all set for Passover? If not, Chef Danielle Fragala-Harper, a Carmel resident and owner of Your Culinary Experience, a chef service catering to Putnam, Westchester and Fairfield counties, offers one of her favorite brisket recipes.

The holiday starts Friday, April 22, at sundown.

Spiced Brisket with Dried Fruit

Serves 6

Ingredients: 

  • 6 – 8 pound Brisket flat cut
  • 6 ounces dried apricots
  • 6 ounces dried, pitted prunes
  • 1 teaspoon ground ginger
  • 1 teaspoon allspice
  • ¼ teaspoon cinnamon
  • 1 teaspoon minced garlic
  • 1 large onion, chopped small
  • 2/3 cup apple juice or cider
  • 6 ounce can tomato paste
  • ½ cup packed brown sugar

Directions:

  • In a small bowl mix together the ginger, allspice, cinnamon and garlic.
  • Rub the spices all over the brisket.
  • In a medium size bowl whisk together the apple juice/cider with the tomato paste and sugar.
  • Place brisket in a slow cooker, top with onions, apricots and prunes, and juice mixture and set for 6 - 8 hours until brisket is tender.
