Spiced Brisket with Dried Fruit
Serves 6
Ingredients:
- 6 – 8 pound Brisket flat cut
- 6 ounces dried apricots
- 6 ounces dried, pitted prunes
- 1 teaspoon ground ginger
- 1 teaspoon allspice
- ¼ teaspoon cinnamon
- 1 teaspoon minced garlic
- 1 large onion, chopped small
- 2/3 cup apple juice or cider
- 6 ounce can tomato paste
- ½ cup packed brown sugar
Directions:
- In a small bowl mix together the ginger, allspice, cinnamon and garlic.
- Rub the spices all over the brisket.
- In a medium size bowl whisk together the apple juice/cider with the tomato paste and sugar.
- Place brisket in a slow cooker, top with onions, apricots and prunes, and juice mixture and set for 6 - 8 hours until brisket is tender.
