Most Popular Slice Sold: No slices here, just pies. Among the top sellers: the Morandi, made with pistachios, rosemary, red onions, and Grana Padano, as well as the Mama Mia, loaded with fennel sausage, onions, and smoked mozzarella. Patrons say the crust -- thin and crispy, but puffed at the edges -- is as good as anything they've seen.
Key to Success: Owner Patrick Amedeo is a CIA-trained chef and Poughkeepsie native who prides himself on the toasty, artisanal pies made in an authentic Italian wood-fired oven. He said Posto's menu is deliberately small so they can make each pie as perfect as it can be. The restaurant also holds occasional giveaways of pies and vino.
