Brand-New Brewery Open For Business In Hudson Valley Sake lovers rejoice. Premium sake maker Dassai has opened a new state-of-the-art brewery and tasting room in the Hudson Valley while launching its premium brand Dassai Blue. The 55,000-square-foot brewery opened on Saturday, Sept. 23 in Dutchess County in Hyde Park, according to New York Gov.
