"It's like a billboard on the highways," said Arbelaez, 43, who is a partner at The Columbia Inn in Montville, known for its super-thin-crust pizza, with Ryan McDermott. Arbelaez will slap a company magnet on the side of the truck and head to a party, where he'll cook The Columbia Inn's signature pie in a conveyor-like oven that he plugs into the bed of the truck. The pizza is ready in about two minutes and can feed 25 people in an hour. …
