Filipino Fast Food Joint Replacing Edison Roy Rogers Jollibee, a fast-food chain based in the Philippines, is coming to Edison soon. An official opening date has not been announced, but the Asian-inspired eatery will be located at 760 Route 1 North and replace a shuttered Roy Rogers, according to a report by ROI-NJ. Jollibee signs have been installed at the location, and a drive-thru will be part of the new restaurant. There are 37 Jollibee restaurants in the United States and about 1,300 worldwide. Jollibee opened its first New Jersey spot in Jersey City at 393 Danforth Ave. more than seven years ago, and plans to open 150 more restaurants …
