YONKERS, N.Y. -- As a parent, there may be no greater sense of accomplishment than knowing your child is attending college and is on his way to finding the path forward in life.

As a restaurateur, there is no greater sense of fulfillment than knowing your child is attending Cornell University School of Hotel Administration. Cornell's hospitality program is considered the best in the world and as part of the Ivy League its graduates are the envy of all the industries they touch.

My son, Dylan, after spending a semester abroad in Europe, and the following semester in Boston at Northeastern University, was accepted at Cornell and will begin his studies as a sophomore next week.

Of course, as parents my wife and I are extraordinarily proud of all his accomplishments but entering the preeminent school for hospitality has been a particular high note.

While Dylan has worked side by side with me since grade school, I always thought that his goals were very different than mine. As it turns out, the hospitality he learned is a door to many options that don’t necessarily mean the running of an independent restaurant like mine.

I hope Dylan will explore the options available to him in healthcare, law, hotel, real estate, finance, labor relations and entrepreneurship. Leadership is the one quality that every organization needs and covets and that is where my hope for Dylan lies.

Wherever he ultimately lands, no matter the industry, leadership and hospitality will be his compass. And with an abundance of humility and graciousness, he will be poised to make a great impact on the field of his choice.

This column is a continuing series by Chef Peter X. Kelly of Xaviars Restaurant Group which runs every Thursday.
