Premium sake maker Dassai has opened a new state-of-the-art brewery and tasting room in the Hudson Valley while launching its premium brand Dassai Blue. Hudson Valley's First Sake Brewery Opening At Culinary Institute In a first for the Hudson Valley, the Culinary Institute of America has formed a partnership with Asahi-shuzo, the brewer of Dassai sake, to open a sake brewing factory in Hyde Park. Gov. Andrew Cuomo made the announced of the newly forged partnership during a visit to Marist College Thursday afternoon.
