He will be showcasing smoked pigs head on with cinnamon sugared doughnut and spicy maple cream.
DiBari said his style of cooking is undiplomatic. "I cook how I feel because to me cooking is an expression of yourself so I really try to stick to that," he said.
"It's what makes me excited to get on the playground, aka the kitchen every day."
DiBari, whose favorite thing to cook is pizza in a wood-fired oven, said he's looking forward to participating in Greenwich WINE + FOOD because it celebrates a huge variety of innovative chefs and like minded individuals.
"It will be hard not to have a good time when you're in a room full of people who love what they do," he said.
