Fry Type: The Barley House takes its fries seriously. They come in two styles: thin (the width of a No. 2 pencil. This is not, the owners emphasize, shoestring style, which is narrower) and waffle-cut. The potatoes used are Idaho, sweet, and Yukon gold, whose hardy yellow flesh stands up well to boiling, mashing and frying.
What Makes Them So Addictive: It’s all in the oil and the temperature used to do up the spuds. Barley’s uses a blend of olive and canola. The fancy cut waffle fries are harder to do, but hold onto seasonings (and ketchup) better.
