MAMARONECK, N.Y. --- For Michael and Avril Kaye, a husband-and-wife team from South Africa who now live in Mamaroneck, cooking is family affair.
Together, the two run the boutique kosher catering company Avril Kaye Caterers, with an office/kitchen at Congregation Kneses Tifereth Israel in Port Chester.
Here, Avril shares her Passover sweet potato kugel, which she says is enhanced if you sprinkle crumbled matzo on top before baking.
Ingredients:
- 1 cup sweet potato, grated, raw
- 1 cup carrots, grated, raw
- 1 cup apple, grated
- ½ cup sugar
- 1/3 cup raisins
- ½ cup matzo meal
- 2 tsp. lemon juice
- ¼ tsp. cinnamon
- 1 stick margarine, melted
- 3 to 4 eggs, beaten
Method:
Mix all ingredients together. Pour into greased square baking pan. Bake at 350-degree F oven for 45 minutes. Sprinkle cinnamon on top and serve.
