Sean Curry of Montvale who blogs at TheSandwichEnthusiast and gets his bread at Rockland Bakery in Nanuet, N.Y., said "grab some bread and cheese and get your turkey on."
He offers the following sandwich suggestions.
Turkey Nut
Ingredients:
- 3 slices leftover turkey
- 2 slices extra sharp cheddar
- ½ golden delicious apple, sliced thinly
- ¼ c chopped walnuts
- 1 c baby spinach leaves
- 1 tbsp leftover gravy
- 2 tbsp mayonnaise
- 2 slices almond bread
- salt and pepper to taste
Directions:
- In a small bowl, mix the gravy and mayo together until evenly mixed to make a gravy mayo.
- Spread on one slice of the almond bread.
- Layer on the turkey, apple slices, cheddar, walnuts, and spinach.
- Salt and pepper to taste, and top with the second slice of bread.
- Eat as is, or panini the entire thing until the cheddar runs onto the grill surface for a delicious, warm leftover lunch.
Full Ham
Ingredients:
- 2 slices leftover ham
- ½ c leftover cranberry sauce
- 1 slice pineapple
- 2 slices Monterey Jack
- 1 tbsp honey mustard
- 1 croissant
Directions:
- Slice the croissant in half and spread honey mustard on each slice.
- Layer the ham, pineapple, and Monterey Jack on top of the bottom croissant slice.
- Spoon the cranberry sauce over the stack and top with the top of the croissant.
- Serve with a side salad of walnuts, arugula, cherry tomatoes and vinaigrette!
Stuffed Cranberry Grilled Cheese
Ingredients:
- 1/2 c leftover stuffing
- 1/2 c leftover cranberry sauce
- 2 slices mozzarella
- 2 slices cheddar
- 2 tbsp butter
- 2 slices Italian panella
Directions:
- Preheat your panini on high.
- Spread butter on one entire side of each of the slices of panella.
- Layer the mozzarella on the unbuttered side of one slice of bread and the cheddar on the other.
- Spoon the stuffing and cranberry sauce onto the mozzarella.
- Place the bread with cheddar on top of the cranberry sauce, cheddar side down.
- Place the entire sandwich onto the panini press and press it.
- Remove when cheese has fully melted or bread has browned, whichever comes first.
- Cut in half, and have a camera ready for the beautiful pull-apart shot.
