Brothers Tomer and Itay Zilkha opened the South Dean Street shop more than three years ago.
"It never gets old," said Tomer on the eatery's Facebook page. "Not even at 1 a.m."
Itay is a London-based accountant who takes care of the business aspects while Tomer, a hospitality and pastry professor at Bergen Community College, handles the kitchen.
Pâtisserie Florentine aims to bring the feeling and flavors of France to the area, all while striving to minimize its environmental footprint.
