Yes, there are cool flavors and colors: blueberry, rainbow and French toast, for example.

But it doesn’t stop there.

You can have your hobo sandwich made on a bagel.

Wait. What’s in a “hobo”?

“Taylor ham, egg and American cheese with a hash brown patty on top,” said Marc Windler, manager and bagel baker.

Then there are bobos, which feature bacon instead of ham.

And sobos, which feature sausage.

Where did these names come from? Frankly, nobody can remember, Windler said.

Bakin’ Bagels isn’t done innovating yet.

Now in development: the pizza bagel.

Want to suggest your own concoction on a bagel? No problem.

“You name it, we’ll do it,” Windler said. “If we have it, we’ll make it.”

Bakin’ Bagels, located at 55 South Washington Ave., calls itself a mini diner.

“We go as close to dinner as you can get without going to dinner,” Windler explained.

The eatery features breakfast burritos, omelets, pancakes, French toast, wraps, hot sandwiches including chicken cutlet and cheesesteak and hot pastrami, French fries, salads and much more.

There are other Bakin’ Bagels shops. One is in Maywood while, down the shore, they’re in Ortley Beach, Lavallette and Seaside Heights.
