Pizza Truck Rolls Into Easton

Pizza has always been a food you can wrap in a napkin and eat while you walk. But never was it quite so mobile as when Jeff Borofsky drove onto the scene. The owner of Easton’s own pizza truck started his business six months ago with the goal of using  fresh, local ingredients to top his pies.

Skinny Pines pizza truck, named after the tall, skinny pines in his backyard, travels all around the area, bringing fresh flavors to locals. With appearances at the Westport Farmers’ market, the Easton Farms Tour last weekend and private events, his business is catching on.

The trained chef and former co-founder of a corporate deli and breakfast joint, the Easton native spent the past few years working as a stay-at-home dad to his 5-year-old daughter, Amber, and 4-year-old twins, Lillian and Sydney.

“I was looking for something fun, something I could do on my time when I wanted to.”

As for the decision to haul a brick pizza oven around on his truck, as opposed to sticking with a stationary location: “I can bring this pretty much anywhere. And in terms of an investment it’s a lot less,” he said, laughing that he had to give the oven a bath after it was covered in flour from the farmers’ market the day before.

The most frustrating part, he says, is dealing with the different health regulations for each town. “[But] having a mobile brick oven on wheels is sort of scary on its own,” he joked.

The toppings come from farms in Connecticut and he makes the sauce by crushing tomatoes himself -- a flavor he says is great on its own.

“I felt [pizza] was a good vehicle for using local produce, local ingredients for toppings. It lends itself very nicely to that and connecting the food to the farm.”
