RIDGEFIELD, Conn. — Have a hankering for Texas barbecue? Hoodoo Brown BBQ is famous for dishing up wings, ribs, chicken and more to satisfied diners in Ridgefield.

And it was the go-to spot recently when Super Bowl Sunday and BBQ Super Bowl fell on the same day. Partner Chris Sexton said that for his industry, "It's like the day after Thanksgiving for retailers."

So it's not surprising to learn that the restaurant, owned by Cody Sperry and Sexton, filled 200 takeout orders, providing 4,200 award-winning wings that day. Sperry is "the man behind all things Hoodoo," Sexton told Daily Voice.

"It's his barbecue that has separated us from the pack and established us as one of the best places to dine in the area," he said. "It was our busiest Sunday of all time, and that is just if you take what we did for the takeout and catering business.

"Add in the steady flow of diners throughout the day, and you have yourself a crazy Sunday."

The restaurant is popular for its chicken wings, Sexton said.

We won our second and third people's choice Wings Fest championships, the week before the SuperBowl. Our wings have become a staple to every diner, and have gotten us notoriety across the state."

"We start with the highest quality. We know that anyone can screw up a Buffalo wing, however nice the chicken is, but by starting with a quality wing our ceiling is that much higher," he said.

The wings are brined, seasoned and smoked in a 108-inch Lan Smoker, "to add a level of flavor that can't be attained by baking or simply frying the wings."

The next step involves flash-frying the wings to their crispy goodness, then tossing them in a house sauce, before serving to a hungry diner.

"The simplicity of everything lets the chicken, and flavor, speak for themselves," Sexton said. Over 4,200 wings were sold for the Super Bowl, he said.

Other items on the menu include brisket, pulled pork, pork belly, beef rib, full-size spare ribs, turkey, chicken and two types of sausage.

"For first-time diners, and for all customers for that matter, what I recommend to give people the best taste and outline of what Hoodoo is all about, is our brisket, pork belly, and cornbread," said Sexton.

The brisket cooks for 16 hours after it is seasoned with salt and pepper. "The simplicity and execution of the brisket is a staple of our barbecue," he said of the popular dish.

The restaurant's pork belly is a "Hoodoo original" smoked then finished in the kitchen.

When done the meat has a "tender juicy, underbelly, with a crispy topping that gives you a wonderful dichotomy of textures that sets that dish apart from anything you are used to at a bbq restaurant," said Sexton.

The restaurant is ideal for families, with its big platters and family-style service.

"We love the communal aspect of dining in our restaurant and love to see families interact over the food, passing (food) back and forth, pushing someone to try something, hoarding all the pork belly, the dynamics of a family around a dining table. That is what I truly believe separates us," Sexton said.
