Butcher Pushes Prime for Holiday Grill

As a last hurrah for the summer barbecue season, there isn't anything better than throwing a few steaks on the grill for Labor Day. At least that's what butcher Salvatore Genario thinks.

"Labor Day is typical hot dogs and hamburgers for the kids, while the parents get themselves a nice steak," said Genario, co-owner of Greenwich Prime Meats.

Although he may not be popular with vegetarians, Genario said some of the bestsellers for the holiday weekend are New York strip, rib eye, filet mignon and porterhouse steaks.

The butcher shop — from the diagram of a cow with different cuts of meat to its homestyle service — offers the best way to buy fresh meat. When asked to crunch numbers on the amount of meat he will sell this weekend, Genario said, "We'll go through a ton of meat. On a good week, I'll go to the market two or three times. People know fresh meat is better quality."

Labor Day relies on good weather and whether families are planning a last-minute barbecue. "With schools starting early this year, hopefully people will stick around," Genario said.
