Cinch Chef Wins Fairfield's Iron Chef Contest

FAIRFIELD, Conn. – The foodies have spoken: Fairfield’s “Iron Chef” is Shawn Russell. The owner of Cinch, a Mill Plain Road prepared food market, beat out Whole Foods resident chef Michelle Ryan and Osborn Hill School chef Wayne Uccellini to win the contest at Fairfield Warde High School last month.

Russell’s vegetarian Cinch Sliders garnered more than 200 votes out of about 350 cast by students, parents and teachers.

The Fuel for Learning Partnership and the Fairfield Public Schools’ food services department co-sponsored the competition on Oct. 24 in honor of the Center for Science in the Public Interest’s Food Day. The annual event is designed to encourage eating natural, healthy foods. Russell, Ryan and Uccellini received a set list of ingredients and were tasked with whipping up a delicious, healthy meal for Fairfield’s kids.

Russell, a Roger Sherman School parent, won with his sliders, which combine cannellini beans, carrots and onions with rice, corn and breadcrumbs into a meat-free patty. The full recipe is available through the Fairfield Public Schools website. The burgers will also appear on school lunch menus throughout Fairfield in December.
