Chip's Restaurant To Open in Fairfield Tuesday

FAIRFIELD, Conn. — Fans of “The Best Pancakes Around” will have reason to celebrate Tuesday. Chip’s Family Restaurant will open its Fairfield location for business Tuesday morning. The new spot, located at the corner of Tunxis Hill Road and Black Rock Turnpike, fires up its griddles to take in customers starting at 7 a.m.

Chip’s original location in Orange has drawn customers from all along Connecticut’s coast since 1966. The restaurant offers a classic diner-style menu, with breakfast served all day, as well as burgers and sandwiches.

Owner George Chatzopoulos said he decided to open a second restaurant to better accommodate his Fairfield County customers. “They always ask me, ‘When are you going to come to Fairfield?’ ” Chatzopoulos said in April. “We looked at a couple of sites … and we found the right place.”

Chatzopoulos spent the spring and summer remodeling the space once occupied by Blockbuster Video before the company’s bankruptcy earlier this year. The site now displays a small slip of paper reading, “Chips will be open for business Tuesday morning.” It's the only sign of the new arrival. But a phone call to the restaurant confirmed that the Fairfield location will open Aug. 16.
