So, does that mean you'll find the same old-world, ingredient-driven approach at the Greenwich WINE + FOOD Festival where Vespa Chef David White will be cooking?
Yes, said White. In fact, he can't wait to showcase his sweet corn risotto and butter poached Maine lobster.
White said he gets his cooking inspiration from going to the market and finding three ingredients, then "touching them as little as possible and letting them showcase for themselves into an incredible dish."
Among his favorite things to cook are braised short ribs and pan-fried veal cutlets. "I also love make pasta from scratch and making Pomodoro," he said.
White said he'll be at the festival "having a good time and just doing what I love to do ... and that's to cook."
