But armed with a chef’s creativity — and his mother’s killer mole paste — it’s no wonder he didn’t stay at the deep sink.
After 20 years as head chef at Tequila Mockingbird in New Canaan, he and business partner Ryan Gillespie are taking their show on the road and opening Tequila Revolucion in Fairfield on Dec. 18.
“It’s authentic Mexican food from all over Mexico,” Guevara said of his new digs at 1851 Post Road.
Formerly Wilson’s Holy Smoke BBQ, the new eatery boasts a chef’s counter, where diners can watch the kitchen magic happen and chat with Guevara if he has a spare minute.
“He’s a flair chef,” Gillespie said. “He likes fire.”
So what will he be plating up?
The menu will focus on five to eight specials a day, allowing Guevara to make use of what’s freshest throughout the year.
Spring and summer may bring unique tacos made with masa tortillas delivered daily from a Brooklyn bakery.
Winter is likely to showcase hearty, flavorful stews and enchiladas with chorizo, steak and shrimp.
Carne Sonora, assorted fajitas, guacamole made fresh a few times a night and more will round out the varied regular menu.
Margaritas will be made fresh and feature Don Julio, Gillespie said.
Tequila Revolucion will be open from 4 to 10 p.m. Monday through Thursday, from 4 to 11 p.m. Friday and Saturday and from 4 to 9:30 p.m. Sunday. A fully integrated menu will be available for easy online ordering.
