Mercado commutes 40 minutes everyday from Mamaroneck and, with his chef du jour Juan Suarez, put together a selection from the Bridgeport restaurant Taco Loco’s menu.
“We pick up everything from the restaurant in the morning,” Mercado said and make everything fresh to order. It takes just under 10 minutes, he said, for the food to be ready for the customer. With the coming winter they plan on taking orders over the phone, so customers don’t have to wait in the cold and snow for their food.
The truck is on the Post Road between the Fairfield Library and the university bookstore every day from 11 a.m. to 2 p.m. and in the five weeks they’ve been operating, Mercado says that they’re doing pretty well.
“I’m happy, it’s a great start,” he said, adding that so far the town and their brick and mortar neighbors on the road have been accommodating. “We’re getting new people every day, and people are getting excited.”
Mercado hasn’t always worked in food or food trucks. For most of his life Mercado worked as a DJ in New York City and in Westchester, even opening his own company, Turn Table Events. But once it started running itself, he said he wanted to go back to his other passion, food.
“I’ve loved the food truck culture,” he said. “It just doesn’t exist enough in this area.”
While looking for how he might be able to get his own food truck, he found Miguel Tomasio’s advertisement on Craigslist. Mercado said they were a perfect fit of food and personality, which he said is necessary when it comes to food trucks.
Eventually, Mercado would like to see a group of food trucks around Sherman Green in Fairfield, giving customers a wide range of fast, easy foods to eat at lunch.
