Jaffe is the owner and operator of Sweet & Simple, which opened in the Greenfield Hill section of Fairfield in February. The bakery is an extension of her online baked goods business, which has expanded to include the Hillside Road shop.
Now Jaffe is partnering with The Farmer’s Cow, a line of dairy products made by six Connecticut dairy farms. The Farmer’s Cow ice cream will be paired with Sweet & Simple’s hand-baked cookies for a line of ice cream sandwiches.
“It’s a perfect fit,” Jaffe said in a press release of her partnership with Farmer’s Cow. “They have such a deep commitment to supporting local businesses and producing the highest quality products. It has been a lot of fun working with the farmers to develop the cookie flavors and get each one just right.”
The sandwiches come in five flavors: vanilla in chocolate chip cookies, vanilla in oatmeal raisin cookies, coffee in chocolate chip cookies, black raspberry with chocolate sugar cookies and mint chocolate chip in chocolate sugar cookies. The last two flavors include a cookie recipe specifically made for the sandwiches.
“There was a lot of taste testing and I’m really proud of the final result,” Jaffe said.
The Farmer’s Cow is a collective of dairy farms based in the northeast corner of Connecticut. Along with milk, cream and ice cream, the brand also sells cider, coffee and eggs. Many of the company’s products are used in Jaffe’s own recipes.
“We sampled our ice cream cookie sandwiches this past summer at the Connecticut Farmland Trust Celebration of Farms event and they were a big hit,” Robin Chesmer, managing member of The Farmer’s Cow, said in a press release. “We’re excited that we are now able to offer them to all of our customers.”
The Farmer’s Cow’s products are available at many grocery stores and shops across Connecticut. Sweet & Simple is located at 75 Hillside Road, Fairfield. Its hours are 7 a.m. to 5 p.m. Tuesdays through Fridays and 8 a.m. to 2 p.m. Saturdays and Sundays.
