Chef Jamie Cooper is as good at making his guests comfortable as he is at cooking them a great meal. When he isnt in the kitchen at Bonda, his restaurant nestled in the Greenfield Hill section of Fairfield, hes in the dining room talking to people.
Through these conversations, Jamie discovered his customers werent quite putting their own wine collections to good use. Our customers have large collections of wine that seem to just sit there, largely unconsumed, says Jamie. The wine is meant to be enjoyed!
So Jamie started a Tuesday night tradition six years ago, at the original Bonda, that hes brought to Bondas new home in Fairfield: Open That Bottle Night. Every Tuesday, Jamie invites guests to bring a bottle from their own collection to enjoy in his dining room, with no corkage fee.
Its simple. Hell make dinner, you bring the wine. And he probably wont even ask you to share.
