Hasting’s residents (and husband and wife) Paul Molakides (of BLT Steak, The Restaurant at 15 Central Park West, Eleven Madison Park) and Jennifer Aaronson (Co-Founder and Culinary Director of Martha & Marley Spoon, a meal kit delivery service and former exec of Martha Stewart Living Omnimedia) say they are fashioning Boro6 to be "a gathering place in the style of a European wine bar, a place where friends and neighbors can gather for a moment or an entire afternoon in a relaxed atmosphere with a beautiful glass of wine, beer, or bubbly."
Boro6 will also offer a curated selection of cheeses, cured meats, sandwiches, salads, and snacks to complement the wine and beer program. There will be more than 25 different wines by the glass (from all over the world including New York) as well as local craft beers both by the bottle/can and on tap. Also on the menu: hand-crafted sodas made from cane-based syrups infused with seasonal fruits.
The design will be contemporary yet classic, said Aaronson -- think long banquets with soft seat cushions, oak tables and black Vienna café chairs facing two walls of windows looking out on the main streets of Hastings. In the center of the room will be a horseshoe-shaped bar with seating for 24 guests.
The bar, she said, will be the heart of B6. "The white stone surface will sit upon a hand-made wood bar, painted a deep peacock blue," explained Aaronson. "The bar itself will feature vintage jars, silver trays, and ice buckets filled with white and rosé wines and a bubbly of the day."
It's clear she has an editor's eye as she notes: "These artifacts, along with beautiful glassware will serve not only as objects of art, but will also be actually integrated into the service. The deep blue hues, the modern wallpaper, and soothing light from numerous brass sconces will be welcoming and evoke a feeling of calm. Boro6 will feel like a stylish, yet comforting, home away from home."
Within a month of opening, the goal is to offer breakfast and lunch -- starting with morning service at 7 a.m. -- featuring authentic morning espressos drinks and pastries as well as prepared sandwiches ready for take-away. The lunch menu will be an abbreviated version of the evening offerings.
The wine bar will also be available for private wine tastings and parties.
Boro6 is located at 549 Warburton Avenue. Initial hours will be Tuesday to Thursday, 5 p.m. to 10 p.m.; to 11 p.m. Fridays and Saturdays and until 9 p.m. on Sundays. Soon thereafter hours will be extended to accommodate breakfast and lunch.
