Life's A Piece Of Cake For Owner At Pelham's Provisions Bakery

PELHAM, N.Y. -- Victoria Coverdale was still in high school when she started decorating cakes at Provisions in Pelham. It was part of an internship at her NYC-based school.

Now, nine years later, she's the owner, as well as the baker and decorater, doing everything from cakes to cookies, cupcakes and pops. Not to mention all the business responsibilities that come with being the boss.

"It's a lot," she said, "And it can be insane at times. But I love it."

After working part-time for then owner Nannette Conners, Coverdale went on to study bakery and pastry arts at Johnson & Wales in Providence, R.I., always coming back into the fold when she was home, eventually working at Provisions full-time.

She said Conners was always joking with her, saying when it came time to sell, would Coverdale be interested?

In the year she's owned it -- it's her official one year anniversary in June -- she's already soared to new heights, making cakes for both Jennifer Lopez and Khloe Kardashian. Both came about from her friendship with the chef at Don Coqui in the Bronx who knew of Coverdale's work.

With the Lopez cake, which was given to J-Lo last summer after a performance (the after party was at Don Coqui), she only had 45 minutes to create it. "He literally came in an hour and a half before he needed it," she said. "It took him two hours to drive to City Island with all the traffic from her concert."

Under normal circumstances, a cake takes an hour and a half to decorate, but luckily, Coverdale had a cake at the ready (a cake originally made for her manager's daughter's graduation). The cake later showed up with images of the party on Page Six of The New York Post.

The same chef recommended her for the Kardashian cake which eventually landed in US Weekly magazine.

Coverdale said that was her first brush with stardom but for her, every cake is special. Right now she's busy with graduation cakes, confirmation cakes, and weddings.

At the moment she's busy working on a cake in the shape of a the Picture House for the the theater's 10th anniversary party on Friday.

As for what's popular? She said it depends on the customer, though lately, in wedding cakes, people are opting for simple and elegant as opposed to a showcase multi-tirered number.

Same goes for flavors. There is no one "most popular" cake. "I can't say we sell more vanilla or chocolate," she said. "It's very individual."
