Pazzo Ristorante and Wood-Fired Pizzeria in Wading River recently added deep dish pizza to its long list of available pie-styles. So far, online critics have been enjoying the thick pizza piled high with sauce and cheese surrounded by crispy dough.

Word to the wise: Deep dish pizzas take an extra-long time to cook. Give Pazzo’s at least 2 hours to bake one.

Launched in 2017, Pazzo (which means “crazy” in Italian) now serves Chicago, Brooklyn, Sicilian, and wood-fired pies as well as their white, grandma, and grandpa versions.

In less than five years, Pazzo's unique pizzas and wide variety have set the restaurant apart from many pizza options in New York. The restaurant has twice made Newsday's list of best pizzerias on Long Island.

The restaurant also prides itself on serving delicious meals to people with restricted diets including vegans, vegetarians, and those with a gluten allergy or sensitivity.

“Everyone deserves to eat great Italian food,” said owner Maria Tranchina on Pazzo’s website. Tranchina said her family has been in the restaurant business for 50 years.

Yelp foodie A M of Stony Brook said they can vouch for the tastiness of the vegan dishes at Pazzo.

“Wow! My first time trying this place and I couldn't be happier,” A M said. “We ordered vegan garlic knots, vegan traditional pizza, and vegan regular pizza. The knots were amazing.. better than any I've had vegan or not. They were soft on the inside and crispy on the outside.. yum! The traditional pizza was loaded with veggies and so tasty! The regular pizza was awesome and it felt nice to be able to order pizza again like non-vegans do! I can't wait to try more items from their vegan menu.”

Pazzo menu standouts include Buffalo tofu pizza, calzones, Cajun shrimp pizza, the Late Night Snack wood-fired pizza, which comes with bacon, ham, sausage, fried eff, and mozzarella, Braised Shortrib and Portobello pizza, Gnocchi Al Forno, Spaghetti with meat sauce, and Roasted Garlic and Spinach Ravioli.

The restaurant serves paninis, heroes, salads, soups, pasta, and other entrees, too.

Yelp foodie Paulie L. of El Cajon, California, said he is a big fan of Pazzo’s Brooklyn-style pizza.

“The crust was crisp and perfectly cooked that adds a nice to crunch to the ‘Brooklyn Style’ sweetness of the sauce,” Paulie L. said. “The pie had an amazing aroma as well. If you don't believe me just order the pie and you will want to use it as an air freshener for your vehicle. If you try Pazzo's just beware you will never want pizza from another place again!”

The atmosphere at Pazzo’s is cozy and relaxed. The dining room is a long corridor with cloth-covered tables on each side. The eatery features a casual bar, a display case for pizza and other goodies, and space for private dinners and events. The interior colors are cream and warm, wooden brown.

While Pazzo’s has attracted many positive reviews, it has been dinged a few times for slow delivery. Still, in most of the online reviews with delivery complaints, the writers had to concede that once they got it, the food was excellent.
